Pan Roasted Shredded Chicken

This dish is just one of those I like to do when I want to keep things simple, yet powerful in flavor. Its really about the spices and herbs you mix into it. A real comfort food, I will usually eat this as a spread on crispy bread, and straight away, I am satisfied. 

It sort of originally started off as an experiment, but slowly and surely became a regular in my house hold. It is so easy to make, and whats really great is that it goes well with any bread, and depending on the bread, the taste will be slightly different, keeping this simple dish always interesting. It is also a great way to use up bread you have at home before it goes bad :)

Prep: 20 mins 


  • 1 Chicken Breast 
  • 2 TBSP Olive oil 
  • 1 TSP Salt
  • 1/2 Chilli padi cut into small pieces - can use 1 TSP chili flakes
  • 1/2 TSP Chili powder
  • 1/2 TSP Coriander powder
  • 2 Cloves garlic minced
  • 1 Red onion julienned
  • 1 Large tomato cut into pieces 
  • 1 stalk of Celery cut
  • 1/3 cup of water
  • Coriander leaves chopped for topping - not necessary, but it is a nice to have touch 


  1. In 1 TBSP of olive oil pan roast the chicken breast. Make sure it is cooked all the way, after which keep in bowl to cool for a few mind
  2. Shred the cooled chicken into small bits, keep aside once done
  3. In a hot pan, add remaining olive oil and start to saute the cut onions. 
  4. About after 1 mins of so, add in the cut tomatoes, chili padi, minced garlic and 1/3 cup of water. Cover the pan for about 3 - 4 mins
  5. Then, add in the salt, chili powder and coriander powder and celery. Mix thoroughly for about another 2 mins. You want to make sure the celery stays nice and crunchy :) 
  6. Add in the shredded chicken, mix properly for about 30 seconds and turn off the heat
  7. Mix in freshly chopped coriander leaves 
  8. Serve on top of your bread of choice
